Firing a KOT

The kitchen order ticket. Fire sends the unfired lines to the station that cooks them.

Fire KOT sends everything punched-but-not-yet-fired to the kitchen.

• Lines go to the station their dish belongs to — the tandoor's tickets to the tandoor, the bar's to the bar. Stations are set on each dish in Restaurant setup.
• Firing in rounds is normal and correct: starters now, mains when the table is ready. Each fire is its own ticket.
• A fired line has been cooked. Cancelling it is a void with a reason and it appears on the KOT audit report, which is what a food-cost argument is settled with.
• The KOT audit report lists every ticket, what was on it, who fired it and what was voided afterwards.

If nothing happens when you fire, there is nothing unfired on the order — everything on it has already gone.
