Day end at the outlet

The restaurant closes its own day, and it will not close one that has not happened.

The restaurant has its own operating date, and its own close. Day end settles the outlet's day: sales by item and category, tax, tenders, voids and discounts, and moves the outlet on to the next day.

It refuses to close:

A day that has not happened yet. If the outlet's date is ahead of the calendar, day end will not run — closing a future day would freeze figures for trade that has not occurred. Fix the date, do not force the close.
With a shift still open. Close the cashier shift first; its cash has to be declared before the day's cash means anything.

A day that traded and was never closed stays open and keeps accepting postings, which is how a restaurant ends up with a "day" holding three days of sales. Close it nightly.
